Homemade Turkey Sausage

Enough for 8 servings


Olive oil
1 med. onion, finely chopped
Kosher salt and freshly ground pepper to taste
2 cloves garlic, minced
2 tsp. Italian herbs
1/8 tsp. ground allspice
1/2 tsp. paprika
1/4 tsp. chili powder
1/2 c. dry white wine
2 lbs. ground turkey or chicken
1T. Worcestershire sauce

Preparation - Directions

Heat a little olive oil in a small skillet over medium heat; add the onion, season with salt and pepper and sauté until translucent. Add the garlic, herbs, allspice and paprika and cook for 1 minute more. Add the white wine, remove from the heat and set aside to cool.

Put the turkey, cooled vegetables and Worcestershire sauce in a large bowl. Lightly toss to combine. Use your hands to mix; don’t over-mix. Cover and store in the refrigerator for several hours or overnight to combine the flavors.

Gently pat the turkey mixture into 16 small patties. Heat a little olive oil in a sauté pan over medium heat. When the oil is hot, add the sausage patties and cook until the patties are cooked through and nicely browned, about 5-6 minutes per side. If you need to, cook in batches but don’t crowd the pan. Serve half the sausage patties immediately. Cool the rest to room temperature, cover and refrigerate for your midweek meal.
