Strawberries and Yogurt-Cream Parfaits

Enjoy fresh, local strawberries with smooth and extra creamy yogurt. Sweet and a bit tangy, it is a perfect anytime treat.

Number of Servings

Serves 12


2 qt. nonfat plain yogurt
1/2 c. or more (to taste) honey
Grated zest of 2 oranges
1 tsp. salt
1 T. pure vanilla extract
2 c. half & half
About 2 qt. strawberries, hulled and halved or quartered
Juice of 1 orange
More honey to taste

Preparation - Directions

Make Yogurt Cream: Line a colander or large sieve with a clean dish towel or coffee filter; add yogurt, cover and set over a bowl. Drain yogurt for several hours; overnight if you can. You should end up with about 4 cups of yogurt cheese.

Put yogurt cheese, honey, orange zest, salt and vanilla in a bowl and whisk or beat with an electric hand mixer to combine. Whisking or beating constantly, slowly add half & half and continue whisking or beating until the yogurt is smooth and well-combined

Cover and refrigerate the yogurt until you are ready to assemble the parfaits. The yogurt cream can be prepared up to 3 days in advance and stored in the refrigerator until ready to use.

Prepare strawberries: put strawberries in a bowl and gently toss with orange juice and honey. Let sit at room temperature for about 10 minutes.

To serve: Put a layer of yogurt into 12 or more small cups; top with a layer of strawberries and repeat with another layer of yogurt and strawberries.
