Pork Quesadillas with Apples and Caramelized Onions

Olive oil
1 onion, thinly sliced
Kosher salt and freshly ground pepper
About 8 oz. smoked Gouda or cheddar cheese, grated
About 1 lb. of leftover roast pork loin, roughly chopped
1 Cortland or Granny Smith apple, peeled, cored and thinly sliced
8 flour tortillas

Preparation - Directions

Heat a little olive oil over medium heat in a medium skillet. Add the onion, season with salt and pepper and, stirring frequently, sauté until the onion is golden brown, about 20 minutes.

Preheat oven to 350 degrees.

Lightly brush one side of 4 tortillas with olive oil. Place each tortilla, oiled side down, on a baking sheet.

Sprinkle about half of the cheese onto the tortillas. Arrange the pork on top of the cheese; season with salt and pepper. Add the apple slices and caramelized onion. Sprinkle with the remaining cheese.

Top with the remaining tortillas and lightly brush with olive oil. Transfer the quesadillas to the oven and bake until cheese melts and tortillas are lightly browned, about 10 minutes.
