Recipe from Susan Nye's Around the Table




2 ripe avocados, peeled, seeded and cut into large chunks
2 T. fresh lime juice
4-6 grape tomatoes, chopped
1-2 T. finely chopped cilantro
1 T. red onion, finely chopped
1 T. yellow bell pepper, finely chopped
1 clove garlic, minced
½ tsp. cumin
Pinch cayenne pepper
Kosher salt to taste
2-3 T. sour cream

Preparation - Directions

Put avocado and lime juice in small bowl and mash with fork. Stir in tomatoes, cilantro, onion, garlic, bell pepper, cumin, cayenne and salt. Add sour cream to taste and stir to combine.
